Metoda parzenia potrafi zmienić smak kawy tak samo mocno jak samo ziarno. Ta sama kawa w ekspresie i w Chemeksie to dwa różne napoje. Oto przewodnik po najpopularniejszych metodach — z prostym przepisem na każdą i podpowiedzią, którą naszą kawę wybrać.
Dwie kawy, dwa charaktery
- Cerrado to omni roast — palenie uniwersalne. Pełne ciało, czekolada i orzechy, niemal zero kwasowości. Wszechstronna: ekspres, kawiarka, przelew, french press.
- Arara to medium roast — palenie średnie. Suszona morela i rodzynka na mlecznej czekoladzie, zaokrąglona kwasowość, długi finisz. Najpiękniej w metodach przelewowych: Chemex, AeroPress, dripper.
Metody, przepisy i jaka kawa do każdej
Ekspres kolbowy (espresso)
Wysokie ciśnienie, krótki czas, mocny i gęsty napój. Najlepsza jest Cerrado — pełne ciało daje klasyczne, czekoladowe espresso z ładną cremą.
Przepis: proporcje 18 g → 36 g (1:2) · mielenie bardzo drobne · woda ~93°C · czas 25–30 s.
- Zmiel 18 g kawy, równo rozprowadź w kolbie i ubij (tamp).
- Zaparzaj, aż w filiżance uzyskasz ok. 36 g espresso w 25–30 s.
- Za szybko i kwaśno? Zmiel drobniej. Za wolno i gorzko? Zmiel grubiej.
Kawiarka / moka
Domowa klasyka — intensywna kawa zbliżona do espresso. Tu również króluje Cerrado i jej czekoladowo-orzechowy profil.
Przepis: pełny kosz kawy (bez ubijania) · mielenie średnio-drobne · woda gorąca · mały/średni ogień.
- Wlej gorącą (przegotowaną) wodę do dolnej komory, do poziomu zaworu.
- Wsyp kawę do kosza, wyrównaj (nie ubijaj), skręć kawiarkę.
- Postaw na małym/średnim ogniu z otwartą pokrywką. Gdy kawa zacznie wypływać i jaśnieć — zdejmij z ognia i schłodź dno pod kranem, żeby zatrzymać ekstrakcję.
Przelew / dripper (np. V60)
Metoda, która wydobywa klarowność i aromaty. Świetnie wypada Arara z owocową słodyczą — ale łagodne Cerrado też zrobi zrównoważony przelew.
Przepis: proporcje 15 g : 250 g (1:16) · mielenie średnie · woda 92–94°C · czas ~2:30–3:00.
- Przepłucz filtr gorącą wodą i wylej ją — pozbędziesz się smaku papieru.
- Bloom: zalej 45 g wody i poczekaj 30–45 s, aż kawa „urośnie”.
- Dolewaj wodę w 2–3 turach okrężnym ruchem, do 250 g. Całość ~2,5–3 min.
Chemex
Gruby filtr daje wyjątkowo czysty, delikatny napój. To idealne miejsce dla Arary — morela, rodzynka i długi, słodki finisz mają pełną scenę.
Przepis: proporcje 30 g : 500 g (1:16) · mielenie średnio-grube · woda 93–94°C · czas ~4:00–4:30.
- Włóż filtr grubszą stroną do dziobka, przepłucz i wylej wodę.
- Bloom: zalej 60 g wody, poczekaj 45 s.
- Dolewaj do 500 g w kilku turach, utrzymując równy poziom wody. Zdejmij filtr, gdy przeleci.
AeroPress
Szybka, wybaczająca błędy i uniwersalna. Z Ararą wyciągniesz owocowy, słodki kubek; z Cerrado — mocniejszy, czekoladowy.
Przepis: proporcje 15 g : 230 g (1:15) · mielenie średnio-drobne · woda ~88°C · czas ~1:30.
Pełne zanurzenie, ciało i tekstura. Wybierz Cerrado — pełne ciało i niska kwasowość dają gładką, sytą kawę.
Przepis: proporcje 30 g : 500 g (1:16) · mielenie grube · woda 94–96°C · czas 4 min.
- Wsyp kawę, zalej całą wodą i zamieszaj.
- Waga. Odmierzaj kawę i wodę wagą, nie „na oko” — to najszybsza droga do powtarzalnego smaku.
- Woda. Kawa to w ~98% woda — użyj filtrowanej, tuż po zagotowaniu (ok. 92–96°C).
- Mielenie. Espresso — drobno; przelew i Chemex — średnio; french press — grubo.

How you brew can change the taste of coffee as much as the bean itself. The same coffee through an espresso machine and through a Chemex are two different drinks. Here’s a guide to the most popular methods — with a simple recipe for each and which of our coffees to reach for.
Two coffees, two characters
- Cerrado is an omni roast. Full body, chocolate and nuts, almost no acidity. Versatile: espresso, moka pot, filter and French press.
- Arara is a medium roast. Dried apricot and raisin over milk chocolate, a rounder acidity and a long finish. At its best in pour-over: Chemex, AeroPress, dripper.
Methods, recipes and the right coffee for each
Espresso machine
High pressure, short time, a strong and dense drink. Cerrado is best — full body gives a classic, chocolatey espresso with a nice crema.
Recipe: ratio 18 g → 36 g (1:2) · very fine grind · water ~93°C · time 25–30 s.
- Grind 18 g, distribute evenly in the portafilter and tamp.
- Brew until you get about 36 g of espresso in 25–30 s.
- Too fast and sour? Grind finer. Too slow and bitter? Grind coarser.
Moka pot
A home classic — intense, espresso-adjacent. Again Cerrado rules, with its chocolate-and-nut profile.
Recipe: full basket of coffee (no tamping) · medium-fine grind · hot water · low-medium heat.
- Pour hot (pre-boiled) water into the base up to the valve.
- Fill the basket with coffee, level it (don’t tamp) and screw the pot together.
- Put it on low-medium heat with the lid open. When coffee flows and turns pale, take it off and cool the base under the tap to stop extraction.
Pour-over / dripper (e.g. V60)
A method that draws out clarity and aroma. Arara shines with its fruity sweetness — but the smooth Cerrado also makes a balanced cup.
Recipe: ratio 15 g : 250 g (1:16) · medium grind · water 92–94°C · time ~2:30–3:00.
- Rinse the filter with hot water and discard it — removes the papery taste.
- Bloom: pour 45 g of water and wait 30–45 s for the coffee to swell.
- Pour in 2–3 circular additions up to 250 g. Total ~2.5–3 min.
Chemex
The thick filter gives an exceptionally clean, delicate drink. The perfect stage for Arara — apricot, raisin and that long, sweet finish.
Recipe: ratio 30 g : 500 g (1:16) · medium-coarse grind · water 93–94°C · time ~4:00–4:30.
- Put the filter thick-side toward the spout, rinse and pour the water out.
- Bloom: pour 60 g of water, wait 45 s.
- Pour up to 500 g in several additions, keeping the water level even. Lift the filter once it drains.
AeroPress
Fast, forgiving and versatile. With Arara you’ll pull a fruity, sweet cup; with Cerrado, a stronger, chocolatey one.
Recipe: ratio 15 g : 230 g (1:15) · medium-fine grind · water ~88°C · time ~1:30.
- Put the filter in the cap, rinse, add coffee and set the AeroPress on your cup.
- Pour 230 g of water, stir 3 times, fit the plunger.
- After about 1:30 press down slowly over ~30 s — stop when you hear the hiss.
French press
Full immersion, body and texture. Reach for Cerrado — full body and low acidity make a smooth, satisfying cup.
Recipe: ratio 30 g : 500 g (1:16) · coarse grind · water 94–96°C · time 4 min.
- Add the coffee, pour in all the water and stir.
- After 4 minutes, skim the crust and grounds off the top with a spoon.
- Press the plunger just below the surface (not to the bottom) and pour straight away, so the coffee doesn’t over-extract.
A few rules that always help
- Freshness. We roast to order and ship within 48 hours — grind just before brewing and use the coffee within a few weeks of roasting.
- Scales. Weigh coffee and water instead of guessing — the fastest route to a repeatable cup.
- Water. Coffee is ~98% water — use filtered water just off the boil (about 92–96°C).
- Grind size. Espresso — fine; pour-over and Chemex — medium; French press — coarse.
